This was a super simple and yummy dinner. The last time I was at the grocery store they had veggie burgers and veggie chk’n patties on sale so I picked up a couple of boxes. I simply popped the premade patties into the oven at 400 degrees for about 20 minutes.
While the veggie chk’n patties were cooking, I sauteed some onions and spinach with a little creole seasoning and some smoked paprika. Then I prepared a flat baking sheet by buttering the surface. I then took slices of whole wheat bread and spread some homemade french onion cream cheese dip on each slice.
After the patties were done cooking i was ready to assemble my patty melts. I layered cheddar cheese, the sauteed onion and spinach mix, the patty and feta cheese. I left the sandwiches open faced and put them in the oven for about 15 minutes and that’s really all there is to it!
Super yummy, gooey goodness and healthy!
